On January 17, 2021, while surfing at Playa Grande in Costa Rica, LM Restaurant Group co-founder Stephan Outrequin survived a near-fatal surfing accident – an experience that permanently shifted the course of his life. Pulled from the water by local surfers and an unsuspecting bystander who risked their own safety to save him, Stephan emerged with a new understanding of what it means to truly nourish the body and care for one’s long-term health.
His long road to recovery sparked a clear realization: the foods we choose aren't just fuel – they shape our health, our resilience, and our connection to the world around us. Embracing a plant-based lifestyle became more than a change in diet; it was an act of renewal and a recommitment to well-being.
From that transformation, LM’s newest concept was born.
